White oak could be just what you're looking for. It has a tight, closed grain that is so fine it's almost invisible. (Red oak is an open grain.)

Other factors that may affect your decision

1. Grain pattern - Logs are cut in three ways, which determines the pattern. Rift sawn features long, straight and consistent grains. Plain sawn has a wavy pattern called cathedrals. Quartersawn is a combination of both plain and rift sawn.
